This may not be what you want to do because of expense, but I just set
up an Axis camera (I think they have a model for a couple hundred) that
has a linux operating system on it. I just set it up to ftp images to a
server with the only little glitch being that the software wasn't
working (configuring) under the Mozilla browser - had to use IE (under
windows in my case). You can specify the rate and number of images being
sent to some extent.. then just have a cron job tar 'em up occasionally
or something.
