You could show them a quick IPCop installation <http://www.ipcop.org/>
and then at the end connect to it's web interface through a Web
browser (might require some extra configuration for the VM
settings...) IPCop is a sort of router/firewall out-of-the-box distro.
(Used it a few years ago to distribute a dial-up connection throughout
my network.)

Another option would be to pick a generic distro like Ubuntu, and
layer on a more specialized desktop interface. For example, you could
install the One Laptop Per Child (OLPC) sugar interface. Or you could
install GPE <http://gpe.linuxtogo.org/> which is an interface used on
some Linux-based hand-held devices, and say: "This is what an embedded
version of GNU/Linux might look like."
