I maybe flamed to an oblivion here but I find Windows 2k8 small business
edition with exchange server fairly easy for non techie users to setup. It
will crash and need to be constantly patched and rebooted every week, but it
will work.
Just an idea until you have time to setup sendmail or SuSE Enterprise
Linux.

I thought about creating a custom Linux suite based on Ubuntu or Redhat that
could be easy to setup with configuration tools that could resemble Windows
Server Small Business Edition.

Not every user is a LAN administrator supporting +1000 users.
