Postfix is another one that is really easy to set up. When I had a server
crash a few years ago (two hard drives in a raid array went bad at the same
time, sigh) I replaced sendmail with postfix. So much easier to set up. It
started out as an IBM project, then was released to GPL.

http://www.postfix.org has a lot of documentation, so you should be able to do
whatever you need to.
