Actually Jon,
 Quite often your second pair can be used to generate another drop out
of a single cable with much deterioration of signal at all. If the
wiring is done to spec, and all connections are done correctly, it can
be a very feasible thing to do regarding long runs on a single cable.
However, the two pair concept only holds water with a desired 10Base
connection, as most if not all are required for 100Base communication.
