 From what I have been able to find using 14.04, there aren't very
many options that work.

The most promising is installing the server ISO (544MB) then upgrading
to ubuntu-desktop (group package?).

I'll keep poking around, but for now, it seems minimal install or
using a USB stick are the "best" options.
