That's a question I've been wondering as well, to be honest.
Personally, I don't trust my Android -- I keep it turned off most of
the time and will probably get rid of it when my contract is up.
However, it is possible with some cell phone models to burn your own
firmware and install your own OS from the ground up. There are a
number of projects like Replicant that supposedly provide all the
software you need, without any proprietary components. I actually
think it sounds like an fun challenge and a good learning experience,
but I'm rather busy at the moment with a more interesting
microcontroller project.
