I agree with Erinn here. Spending time with Build linux from scratch,
even if you just follow the steps, teaches you a lot about how linux
works.

I used a boot CD and a VM to build mine. So you could do this from
windows if you didn't have a choice.

Gentoo and Slackware would be good distros to cut your teeth on mostly
because there are still folks on the list that use those.
