I didn't feel like going through the Xcode documentation, as I only has
one question, and I have no desire to learn anything about the Xcode UI
or other project functionality. So I tried the old TaE method (Trial and
Error) and discovered that the Xcode version of GCC still recognizes the
standard CPATH environment variable as a header search path.

I suspect that all the variables listed here also work, though I haven't
got around to trying all of them yet:
