A simple google will answer many questions, Damien. There are true HD
adapaters that work just fine under Linux, but they're typically very clear
about it being unencrypted HD. Since first-gen HD TVs typically didn't
support HDCP you can probably still get older tuners for sat & cable that do
unencrypted HD streams (more than likely the 480i/p variety).

BTW, your local broadcast HD is unencrypted, too. In short, this isn't
exactly rocket science, even for a video ignoramus like myself.
