help, help scripting masters

Can someone help me with this, check it.

command --folder a\ folder\ with\ spaces

now in a bash script, say,

cd "$FOLDER"
or
ls "$FOLDER"

I haven't found a way to hold the escapes in a variable, do the escapes get removed when entering the variable
or when using the variable? I'm stumped. It's gotta be something simple, as always. |;0)
