I guess the goal is to set up a mail server that would be easy to install (I've tried qmail and I got stuck a while back and just haven't tried to fix it yet), would work with slackware, provides good security (I hear sendmail isn't as secure as most), and has the potential to grow (right now I would be the only user but I imagine I could have a thousand or more in the future).

The easy to install is not a prerequiste. I just bought the O'Rielly book on Exim (hope it will help), but I was looking for a book on qmail... the local bookstore (I am in Augusta, GA now) didn't have one. But O'Rielly has a qmail book due to come out March 5, I believe.

Thanks for the help.

Sure it is. sendmail, postfix, qmail or exim are all good. qmail is my
preference but each has good potential possibilities. What are you
looking to do with exim ?
