Looking into cpio I stumbled across 'cdbkup'. It's not perfect, but
with a little hacking I got it to do what I need (you gotta love open
source software).

There's still one issue with it incorrectly sizing the iso's it creates
(specifying a 700MB actually generates about a 1000MB iso file), so I
have to specify about 450MB in order to actually get a 700MB file.
Apparently it's a problem with RedHat systems only though.
