Perhaps I'm missing something, but this is still not an MTA issue. It goes
without saying that you should be keeping up to date on vulnerabilites of
*any* installed software. And when one arises, MTA or not, you need to deploy
patches quickly and consistently.

At that point, if your admin has roughly sixty boxes to administer, you really
need to look into software deployment products. Luckily, most unices include
one for free.

You've completely lost me again. What does MTA setup have to do with patch
deployment? And how does that leave a false sense of security?
