GnuCash. They don't all come in from the same backgrounds, but somehow
manage to find common cause and they are getting a wonderful job done.
You might start by wading through the recent exchanges on the re-writes
of their GUI stuff.
Go to http://www.gnucash.org, and also subscribe to the developer ML.
A major revision is scheduled for January release, so LOTS of stuff was
hashed out during the last month.
