Debian installs Exim by default, so those configuration questions
probably won't help you. You can replace it with Postfix by apt-get
install postfix (I assume you've already done this).

To run the debconf configuration again, try this:

dpkg-reconfigure postfix

You can reconfigure a lot of packages this way (dpkg-reconfigure ssh,
etc.) however it won't work for a package that doesn't have debconf
options.
