Do you want "pretty and easy to follow interfaces" or be down in the bowels of
the cli?

For cheap and easy (and probably a fine way to learn the basics) there's the
IPCop distro http://www.ipcop.org. It's easy to install and easy to configure
(as long as you remember it uses non-standard ssh ports).

Probably a fine way to learn "how stuff works" before having to go in there
through various GUIs and config files to set stuff up. Plus, I believe you can
still go in there mucking about using various editors and command line tools to
tune and tweak away.
