Chris,
I have done this in the past with a Neoware thin client that had an
additional NIC card installed (1/2 height). Ebay has a wide selection
of thin clients (neoware, wyse) that are dirt cheap an have no moving
parts. Many are capable of PXE boot and don't need to use the local
storage.
