Jailbreaking is an iOS thing. On android, you root it.

Rooting is now incredibly easy for a large number of android devices,
with the one-touch-root app. That's what I used for my Nexus One.

Then I installed the Cyanogenmod 6-RC2 ROM in order to fix my wifi
problem, which hasn't been fixed in stock 2.2 yet.
