If you're looking to remove most of the desktop software the package
management tools can help with that. I typically use debfoster (with
task support on) for doing this.. however tasksel itself runs the
following program to achieve this.

Go to your first virtual terminal, log in, run:

sudo tasksel -t remove ubuntu-desktop

If you like what you see, remote the -t option and run it again followed
by: sudo apt-get --purge autoremove

Then run:

tasksel --list-tasks

You can use this client install and remove tasks which define package
sets. I believe one of tasks is called 'server'
