Apple severely limits iPhone multitasking. I guess it's to preserve
the experience. They do support background push-like notifications,
though.

The OS is itself preemptive, I'm sure. I cracked my first iPod touch,
and ran Terminal et al. on it just fine. Other than a lack of good DNS
tools, it was pretty handy. Haven't bothered cracking recently (on
iTouch IV), because ssh apps are available in the store.
