Gut instinct says:

  If it's > 300mhz, it's a good server.
  If it's > 850mhz, it's a good desktop

anything above that is a score! and anything below that is
up to individual taste.

Since these were P3's, that means they're in the 450 - 1.4Gh
range, which is good. Knowing which release (Katmai,
Coppermine, Tualtin) is helpful too, but not that necessary,
unless you're doling out for spare parts.

My firewall/mail-server is a P2-200 right now. It's been
working fine for the last couple of years, and it's pretty
quiet. About the only thing that would make it bullet-proof
is to get rid of the fans and the hard-drive.
